That level of professionalism, and ability to put their guests at ease, deserves a standing ovation. It’s also fun, and we find ourselves chatting and laughing with the team as the night progresses. ![]() Restaurant manager Michael Stoddart tells us we will meet all waitstaff throughout the evening, saying: “it’s like a dance.” And a dance it is, one that’s meticulously orchestrated, incredibly intuitive, and thoughtful, as up to four servers place intricate dishes in front of us. Why we love it: The level of service at Oncore by Clare Smyth cannot be overstated, and is unlike anything we’ve experienced before (and we eat for a living, so that’s really saying something). What is it? Three Michelin-starred British chef Clare Smyth’s first and only international restaurant, located at Crown Sydney.
